I love this book. As soon as I got mine and opened it, I got one for my daughter. I love the way it teaches you principles that lead to intelligent improvisation. I also love the way it turns old habits and assumptions upside down, and helps one understand just what a strategy is trying to achieve instead of blindly following a rule. I also like the recipes.

Usefully! I can find just what I need
easily.

That is not what I was focused on. I subscribe to Milk Street and watch the shows, so I know the basic philosophy.
